Here is a glossary of terms you may encounter when you visit the world of the Maya at our restaurant.

*If there are two terms separated by a / the first term is in Spanish and the second in Mayan

 

achiote / kuxub - annatto

adobado - stewed in achiote, garlic, and banana leaf

arroz con leche - rice pudding

bienvenidos – welcome

calabasa / kuum - squash

chocolate / cacao-  chocolate

cebolla curtida - onions blanched with vinegar

chimole - a sauce made from charred chilies

Chocolate Abuelita - a brand of hot chocolate made from raw cacao beans and unrefined sugar

cilantro – coriander

cocina / koben - kitchen

cochino / keken - pig

elote / nal –ear of corn

entra / ocen - come in

empanada - a corn tortilla filled and folded over to create a pocket or pie

escabeche - chicken cooked in orange and lime juice, crushed black pepper, garlic, and onions

flan - caramel custard

horchata - rice drink

maís / ixiim – kernels of corn

panucho - corn tortilla, stuffed with refried beans and pan fried

salbute - a deep fried corn tortilla

salpicon - finely diced garnish of radish, cilantro, peppers and lime

salsa de tomate / ppac yetel ic - tomato sauce

tamale - a meat pie with a crust of corn masa cooked in banana leaf

tomatillo – a relative of the kiwi that resembles a mall green tomato

tortilla / uah - flat cake made of corn flour

tres piedras / oxppel tunich - three stones

pepita / onzicil - pumpkin seed

pol can - literally this means snake head; masa filled with a pumpkin seed and white bean mixture

postre / cħuhuc uah – sweet cake
